Making sun-dried tomatoes

After browsing my ‘Leon’ cookbook I decided to give the ‘sun-dried’ tomatoes recipe a go, especially as it sounded so easy.

I chopped 500g of cherry tomatoes, drizzled them with olive oil, seasoned with salt and pepper and then left them in the oven for 7 hours on a low temperature (60C).
