Festive food on Kat Cowan’s show on BBC Radio Sheffield
I woke up to an early alarm on Saturday morning to get into the festive vibe to talk festive food on Kat Cowan’s BBC Radio Sheffield show (7am-10am).
For this show, the whole thing was going to be from Kat’s house and I was on to talk about starters for Christmas, specifically the classic prawn cocktail.
It was great fun being part of the action, there was plenty of banter from all of the guests, with fine cooking from chef Jamie Bosworth and drinks advice from Patrick of Le Bon Vin. I have to mention the beautiful singing from Katie Bosworth with accompaniment from Julian on guitar.
I made my prawn cocktail with a few festive twists, I didn’t want to mess with the classic too much as this is why people love it. To make it a little more special, I added some extra garnishes to make it look the part, pomegranate seeds, toasted flaked almonds and lime zest – to give vibrant reds and greens.
Prawn cocktail is an easy starter for Christmas as you can make it ahead and keep it in the fridge, also you can do it together with kids as it is straightforward. The recipe can be found on BBC iPlayer and you can listen again to the show.
Jamie Bosworth’s vegetarian pie made with creamy leeks, cheese and butternut squash wrapped in puff pastry was delicious . The fried lotus root crisps served on the side were a revelation. Then the white Christmas dessert of panna cotta with white chocolate soil and coconut cheesecake cream was pretty special. It was very sophisticated and tasted suitably decadent and indulgent for the seasonal festivities. The recipe can also be found on BBC iPlayer.
